Yamboon
The yam bean is a fast growing tall climber. The plant has turnip-like light brown rhizomes. The leaves are undivided or three-lobed. The circumference of the leaf blade is rhombic or kidney-shaped, up to 14 cm long and has a serrate leaf margin. The flowers grow in upright racemes up to 60 cm long. The solitary flowers are butterfly-shaped, about 2.5 cm in size and bluish-violet in colour. The fruits are 7-14 cm long, up to 2 cm thick, finely hairy legumes. The root nodules are eaten cooked as a vegetable or processed raw in salads. The flesh is white and has a sweetish taste. The tubers contain 10% starch and 5% protein. In Thailand, the tubers are eaten with ground cayenne pepper, sugar and salt ('phrik ka kriea'). The unripe legumes can also be eaten as a vegetable. The yam bean is native to Central and South America.
