Instant Lomi Noodles

Lomi, also called pancit lomi, is an originally Filipino dish made from thick fresh egg noodles. Especially in the eastern part of Batangas it is a very popular dish. Lomi is best eaten while hot. It's a challenge to finish eating before the bowl gets cold. To spice up the taste, a mixture of soy sauce, kalamansi juice and crushed fresh red chilli peppers can be added to the dish according to your own taste. The same soy sauce mixture can also be used as a dipping sauce for any meatballs.

How to prepare:

• Cook the noodles in 480 ml of brisk boiling water.
• Stir in the spice mix after 1 minute. Let it simmer for another 4 minutes
• Remove from the heat and let it cool for a while
• If a thicker soup is desired, let it sit for a few minutes. Delicious with egg! Add one after simmering for 4 minutes and stir gently until the egg is well dispersed.
