This dish is originally from the Ilocano region of the Philippines. Pinapaitan also called Papaitan is a famous soup dish that is traditionally made with cow or goat entrails. The name of this dish is derived from the Filipino word "Pait", which means "bitter". The bitter taste originally comes from the bile that is traditionally used in the soup. Despite this dish being very popular, not everyone will appreciate the taste at first. But as with many delicacies, it's a dish you have to learn to eat. This dish is often eaten with calamansi fruit or juice. Today, the goat entrails are replaced by beef entrails.
Requirements: (6 to 8 people)
- 1 kilo of cooked and sliced beef
- 1 green chili pepper
- 625 ml cooking liquid (from the beef)
- 1 sachet Pinapaitan Bitter Stew Mix
Preparation method:
- Mix 1 kilo of cooked and sliced beef with 1 green chili pepper
- Add 1 bag of Pinapaitan Bitter Stew Mix with 625 ml cooking liquid
- Bring this to a boil
- Let it simmer for 5 minutes and serve
