Sushi Rice
Sushi rice is a white, round-grain type of rice that, like sticky rice, contains quite a lot of starch. The result is a rice that sticks together after cooking. This rice can be prepared like normal rice, but if you really want to make Sushi you have to do this in a different way than most people do.
Preparation method:
- Wash the rice well
- Put the rice in a pan with water (1 part rice, 1 1/2 parts water)
- Bring it to a boil
- Put the lid on the pan
- Cook on a low heat for 15 minutes until all the water has been absorbed
- Remove the pan from the heat and let it rest for 10 minutes
Traditional preparation method:
- Wash the rice in a bowl of water until the water runs clear
- Let the rice soak in water for 30 minutes
- Place the rice in a pan with about 1.1 to 1.2 as much water as the rice
- Boil the rice with a piece of Kombu 5 x 5 cm
- When the rice is cooked put the rice in a hangiri and mix the sushi rice with the otafuku vinegar
- Cool the rice with a fan until it is cold
- Now the rice is ready to make sushi
