Lapis Legit

Lapis Legit is an Indonesian delicacy that has arisen colonial times in the Netherlands East Indies. The spekkoek consists of layers in two colors. In the original recipe, brown sugar was processed in the brown layer and refined sugar was processed in the lighter layers. For other variants, one can use the Pandan flavor or cocoa.

The spekkoek is often confused with the dish Kue Lapis because this actually means cake in layers. However, Kue Lapis is made up of pudding or gelatinous layers of various colors. The layers are often slightly thicker than with the known spekkoek. In the Indonesian kitchen spekkoek is also called spekuk, but the name Lapis Legit is the most common. It is generally cut into thin slices.
