Chu Hou Paste
Chu Hou paste is a spicy sauce made from fermented soybeans with garlic and ginger that is traditionally used in combination with stewed beef or chicken. The sauce is often flavored with sesame paste and star anise. The sauce has a hint of licorice and anise in taste. You can use the sauce as a marinade, dip, or stew. After opening the jar, it is best to keep it in the refrigerator. Keeps for months in the fridge.

Stewed Duck with Chou Hou Sauce
Supplies:
- 1 piece of cooked duck (1200 gr)
- 20 g ginger (sliced)
- 20 gr spring onion (sliced)
- 20 gr Onion (chopped)
- 20 gr Chinese parsley
- 2 tbsp Shia Hing Wine
Marinade:
- 2 tbsp Lee Kum Kee Double Deluxe Soy Sauce
seasoning:
- 750 ml of water
- 3 tbsp Lee Kum Kee Chu Hou Paste
- 1 tbsp Lee Kum Kee Premium Oyster Sauce
- 1 tbsp Sugar
- 1/2 tsp Lee Kum Kee Premium Dark Soy Sauce
Preparation method:
- Mix the duck with the marinade. Use 1 tablespoon of oil to fry the duck until golden brown. Set it aside
- Use the same wok with the shortening to sauté ginger, spring onion, onion and Chinese parsley. Let the wine simmer and add the spice mix
- Bring everything to a boil and add duck. Put the lid on the pan and let it simmer for 30-45 minutes.
- Remove from heat to cool
- Cut the duck into pieces. Use some cornstarch solution to thicken the sauce and pour over the duck to serve hot.
